Decades ago, when this fact was beginning to be appreciated, researchers reported unusual cures from simple diet changes. Researchers in Copenhagen described the case of a farmer who had been having ten to twenty watery stools per day. He had applied for disability benefits because of extreme fatigue. He was hospitalized and put on a lactose-free diet. Within two days, his stools became normal. |

Researchers are pointing their fingers at cow's milk proteins, viruses, and genetics as likely culprits.56 People with insulin-dependent diabetes will need insulin injections regardless of the diet they follow, but most find that a low-fat, vegetarian diet along with regular exercise make the illness much more manageable.

Further, infants who are breast-fed and deprived of cow's milk for longer periods are much less apt to develop diabetes. In another incriminating new study, researchers at Children's Hospital in Helsinki compared early exposure to cow's milk with later risk of diabetes. | Lactase enzyme replacements will not benefit those people who are allergic to milk proteins or who cannot tolerate some other type of sugar.
Fructose
Fructose is used as a sweetener in many soft drinks and is present in a number of fruits. Individuals may be fructose malabsorbers and suffer symptoms similar to lactose intolerance.
Sucrose
Sucrose is common table sugar. The sucrase enzyme is needed to break down sucrose into glucose and fructose. If malabsorption symptoms exist but the lactose test is negative, sucrose intolerance should be considered. |

| Carrageenan is used in milk and chocolate products due to its ability to react with milk proteins. However, unlike other plant polysaccharides, it adversely affects the intestinal mucosa.7,8 It has been shown in rats to induce ulcer formation in the cecum, due to the promotion of mucosal macrophage release of lysosomal enzymes. Other rat studies have shown carrageenan to enhance carcinogen induction of neoplasia, colerectal carcinoma, birth defects, and hepatomegaly. |
| Lactose intolerance is very different from milk allergy, and individuals who don't produce sufficient quantities of the lactase enzyme aren't necessarily allergic to milk proteins.
A reliable test for lactose intolerance can differentiate this disorder from other digestive problems such as milk allergy and irritable bowel syndrome. An accurate diagnosis is important because:

Personal Advice
Fresh fruits and vegetables and grains and cereal contain fiber which is essential for healthy colon and bowel function. Eat a diet that is high in those foods and relatively low in the more difficult to digest meat and fatty products.
Eating several small meals throughout the day instead of a large meal at night will help allow the body to properly digest food. |

11. How Natural Is "Organic"?
The organichbel is helpful in understanding what you're buying and how natural it really is, but only if you know what the term really means. The new regulations divide organic labeling into four categories.

If you are an adult who can tolerate lactose, have no problems with allergic symptoms from milk proteins, and only wish to reduce your fat intake, then skim milk is the product for you. Skim or nonfat milk has less than 0.5 percent milk fat in it. The removal of the fat also removes the vitamin A. Some products are therefore fortified with vitamin A. Check the label to be sure.
Powdered milk is marketed as powdered whole milk or powdered skim milk. Both have had most of their water removed. The powdered skim milk has also had most of the fat removed before it is dried. |

Phytates in unleavened whole grain bread reduce iron absorption although this may be reversed in the presence of meat and vitamin C. milk proteins, albumin and soy proteins may also reduce absorption.
As it is highly chemically reactive, iron can cause damage to proteins and fats in cell membranes. It is therefore bound to proteins in the body to limit its toxic effects and is not excreted in the urine. A protein known as transferrin, binds to iron and is responsible for its transfer to the bone marrow. Iron is stored in the form of ferritin, mostly in the bone marrow, liver and spleen. |

The curd faction of milk is comprised of a variety of milk proteins termed caseins while the whey proteins include lactoferrin, al-pha-lactoglobulin, beta-lactoglobulin, albumin, lysozyme, and immunoglobulins. Enzymatic or acid treatment of milk removes the curd. When casein is removed from skim milk the remaining portion is whey or "milk serum." Some states have erroneously classified it as a filled milk; however, filled milk by definition is cow milk with the animal fat replaced by a vegetable fat.

Cow's milk proteins (a trigger of allergy reactions) have been found at higher levels in milk from breast-feeding mothers with colicky infants than mothers with noncolicky infants.7 A double-blind study of colicky infants (either bottle-fed or breastfed) showed that changing to a low-allergenic formula or restricting the mother's diet to exclude certain allergy-triggering foods significantly reduced colic symptoms in the infants.8 A nutritionally oriented physician can help determine which foods in the breast-feeding mothers may be contributing to colic. |
| If the child is fed with formula, the problem may be an intolerance to milk proteins from a cow's milk-based formula.3 Switching to a soy formula may ease colic in such cases.4 Infants who are sensitive to both milk and soy can be given a nonallergenic formula.
If the child is breast-fed, certain foods in the mother's diet may provoke an allergic reaction in the child. Cow's milk consumed by a breast-feeding mother has been shown in some,5 but not all,6 studies to trigger colic. |

Cow's milk proteins are also the main cause of colic, which affects one baby in every five, and they are among the most frequent triggers for migraines, arthritis, and digestive problems.
At the time that the New England Journal of Medicine article appeared, cow's milk had already been shown to contribute to iron deficiency and other health problems in children. Unfortunately, parents are often told that milk is a good source of calcium, but are rarely told of its disadvantages or of healthier calcium sources. |
| Milk sugar, called lactose, is a common cause of digestive symptoms, and milk proteins can elicit reactions as well.
Young children can nearly always digest lactose, because they have plenty of the lactase enzyme that splits it into smaller sugars, called glucose and galactose, which are then absorbed. However, the lactase enzyme begins to disappear after infants are weaned, and most adults have little of it left, which is why a glass of milk can cause indigestion and gassiness.

However, if the test shows that you are able to digest lactose, there is still no advantage to doing so, as you are then subjected to the galactose that comes from it. |
| However, in the April 1991 issue of Pediatrics, researchers reported finding that intact cow's milk proteins do, in fact, pass through the blood into the milk of milk-drinking women, a phenomenon now known to occur quite commonly.26
